Grilled Steak With Garlic Chive Butter

INGREDIENTS
1/4 cup butter, room temperature
3 cloves garlic, minced
4 steaks (use your favorite cut)
1 tablespoon chives, chopped
salt
pepper

DIRECTIONS
1. Heat grill on high heat.
2. In a small bowl mix butter, minced garlic and chives. Set aside.
3. Sprinkle both sides of each steak with salt and pepper.
4. Grill steaks 4 to 5 minutes per side, or to desired doneness. When done, top steaks with garlic butter, and allow to rest for 2 to 3 minutes before serving.

Grilled steak and vegetable salad with rosemary red wine dressing

I recently went to a small organic cooking class here and one of the recipes we ate I really enjoyed so I decided to replicate and post here for you all! Here it is.
Steak, veggies & salad

2 Rib eye steak
3 Tbsp Olive oil
4 Tbsp balsamic vinegar
3 sprigs fresh rosemary chopped
1 red bell pepper sliced in strips
1 red onion halved & quartered
2 cups your favorite mushroom halved
salt & pepper to taste
2 cups fresh baby spinach
2 cups fresh romaine chopped

Dressing
3 tbsp red wine vinegar
1 tbsp coarse ground mustard
1 small shallot minced
1/2 cup EVOO
1 small sprig fresh rosemary chopped
salt & pepper to taste

Turn on grill to high leave on with lid closed for 5 minutes, reduce heat to medium low and clean grill.

In food storage bag combine 2 tbsp olive oil & 2 tbsp vinegar, 1/2 of rosemary, salt and pepper. Set aside to marinate until steak is at room temperature. In large bowl combine all veggies, remaining oil and vinegar, salt and pepper and toss till coated. Place veggies on grill first turning once after 10 minutes. Allow veggies to cook until soft but still with a little bite. Remove and place back in bowl. Cover with foil to keep warm. Place steaks on grill and cook until desired doneness (no I can't tell you how long I cook mine until medium rare and I tell how done it is by poking it with my finger). While steak is on grill combine all ingredients for dressing reserving oil. Whisk together and then whisk in oil quickly to emulsify. Taste for seasoning and adjust accordingly. Remove steak from grill and allow to rest. Place spinach and romaine on plate and top with half of veggies. Slice steak on an angle and place half on salad and veggies. Top with dressing to taste.
**This entire meal can be made in a skillet, frying pan, or grill pan, or even a george forman grill. Really all you need is the ingredients and you can cook it however you choose!

Halve then quarter onion


To cut pepper cut around core leaving seeds, top and bottom in tact.

Cut into strips skin side down

Place in bowl and toss in marinade to coat

Preheat grill

Clean grill

Place veggies on grill

A shallot

Peel shallot

thin slice long way

Then make 3 cuts perpendicular to previous cut

Finely dice and you will be left with pieces all the same size

Line rosemary up on board

And chop

Turn veggies

Stack romaine leaves on top of each other

Slice in thirds length wise

Chop into bite size pieces

Combine with spinach

Place steak on the grill

Create salad dressing

LET STEAK REST

Slice on an angle


Plate and serve

This is the vinegar I use, It is aged 25 years and was pretty pricey for one bottle. I reserve it for romantic dinners like this one.

Tuesday's dinner, steak with carmalized onions & garlic, mashies with beef gravy and a caprese red onion salad.

First of all I'm a huge asshole who didn't take a picture even after my husband said are you sure you don't want a picture. But I didn't' because I didn't like the presentation. Yeah I suck I know. This is also another one of those recipes with absolutely no measurements to most of it.

Also the marinade and salad and gravy all tie in so I recommend using my marinade and not your own for this.

Steak
Place on tri tip whole in a large plastic bag add the following (stab it with a knife a few times first)
Balsamic vinegar, umm about a quarter cup
Soy sauce, about the same
5 cloves rough chopped garlic
Lot of pepper
Couple squirts lemon juice
Couple squirts hot sauce
About a tbsp or more of crushed red peppers
about 1.5 cups of water

Allow to marinate on counter for about an hour (on the counter brings the steak to room temperature causing it to be more tender when grilled.)

Throw steak on grill on low heat. I did my outside burners on low and the inside one off. I like to cook slow and steady it taste better and cooks more even.

Mashed potatoes
If you don't know how to make mashed potatoes, I can't help you.

Gravy.
2.5 cups chicken stock
3 beef bullion cubes (I use a lot when its beef because their bullion cubes tend to be less flavorful then chicken.)
Chopped onion, couple tbsp
chopped garlic, couple tbsp
Shit load of pepper
2.5 tbsp butter
2.5 tbsp flour

Bring broth and bullion to a boil and stir until bullion dissolves. Pour into heat safe glass and put butter, onions and garlic in pan and stir over medium heat until bubbly then add in flour and stir until combined and bubbly. Pour broth back in pan, add pepper and stir over high heat until it is almost boiling. Reduce to low heat and stir till it thickens. Keep on low heat and stir occasionally until serving time.

Caramelized onions and garlic
1 Onion sliced into quarter inch rings
lot of garlic sliced
Butter

Throw all this into a pan and allow to saute, being stirred often until onions caramelize. Watch heat level so as not to burn garlic.

Caprese salad with red onions
7 small sweet tomatoes chopped into bite size pieces
1/4 small red onion chopped thin
Basil chopped
about 1.5 cups chopped fresh mozzarella (bite size pieces)
1/2 cup balsamic
couple squirts EVOO
Kosher salt
Pepper

Toss in bowl. Leave on counter to bring to room temp.

When steak is done (about 20 minutes for medium rare) place on cutting board and allow to rest for about 5 minutes. Slice into thin pieces and put on place. Top with onions and garlic. Plate mashies and top with gravy. Add your salad to the side and wala!

Muffalata roll


(The photo doesn't do this justice because I totally forgot to take a pic while it was all pretty and rolled up!)

1- Tri tip roast filleted and flattened (You can have your butcher do this, or simply cut it down the middle and then from the middle cut each half out from center almost to end flattening it more, then put plastic wrap over it and whack it with a can to flatten) basically you want a very flat piece of meat.

1- small white onion diced
8- cloves garlic 3 finely chopped and 5 cracked
1/2 cup italian bread crumbs
1/2 cup shredded parmesan cheese
1- egg
28 oz- can diced tomatos
10- slices bacon cut into 1/2 pieces
3- slices turkey
3- slices ham
10- slices salami
4- slices mozzarella cheese
1- cup white wine
2- tbsp olive oil
lots of salt and pepper

In deep dutch oven cook bacon until fat comes out (about 7 minutes) add cracked garlic and onion and saute until soft. While bacon is rendering mix egg, parmesan, finely chopped garlic, bread crumbs, olive oil, salt and pepper. On flattened steak layer turkey, then ham, then salami, cheese and finally bread crumb mix. Allow a half an inch around all edges of steak. Roll the steak up similar to a jelly roll and tie it closed. Remove bacon from pan leaving grease and place steak in pan over medium high heat. Brown on all sides, for about ten mintues. After steak is brown add wine and scrape all the brown off the bottom of the pan. Cook until wine reduces to half. Add bacon, onion, and garlic mix back in and cover with tomatoes. Add a bunch more salt and pepper, stir and cover. Cook for about 30 minutes, less if you like your meat rare. No matter what the outside will be cooked well done! This meal was great. I actually tasted some of the sauce and even some of the meat and I was impressed. My husband especially liked the sauce with the bacon fat in it and loved the salami inside of the steak. He packed it up to take to lunch tomorrow. I served this with some fresh store baked bread for dunking in the sauce.

If you are cooking on a budget you can substitute tri tip for flank steak.

I saw a recipe similar to this in Rachael Ray's magazine but her's was much more high maintenance and hoity toity. I made mine more people friendly and it turned out great.
